1. Remove yellow leaves from Chinese kale, skin and cut into 7-inch lengths, blanch in boiling water and remove to a plate. Dice ginger and shred red pepper, set aside. 2. Heat the oil and sauté diced ginger till fragrant, then add light soy sauce, a pinch of sugar and chicken powder. Pour the mixture over Chinese kale, garnish with shredded red pepper.
